Two Easy Low Fat Chicken Recipes for the Crock Pot
Next time you want to make a simple, yet healthy meal for your family, turn your thoughts to the crock pot. All you need to do is make sure you have a few items on hand, and you can throw this together for cooking in no time. Here are couple of my personal favorites that I make for my own family.
Black Bean Salsa Chicken
4 boneless, skinless chicken breasts
1 jar of mild salsa
2 cans of black beans with juice
Salt and Pepper
Put all of the ingredients into a crock pot and turn it on. Allow to cook 4-6 hours on high or 8-10 hours on low. Chicken temperature should be 170 degrees. Serve as whole pieces of chicken with sauce drizzled on top. Or shred chicken and mix everything together to create burrito filling, tostada topping, or taco salad topping.
Chicken Barbacoa
4 boneless, skinless chicken breasts
1/2 packet of taco seasoning
1 can of diet cola
Salt and Pepper
Put all of the ingredients into a crock pot and turn it on. Allow to cook 4-6 hours on high or 8-10 hours on low. Chicken temperature should be 170 degrees. Shred chicken and mix everything together to create burrito filling, tostada topping, or taco salad topping.
